ABSTRACT: The objective of this study was to review technological and toxicological factors related to presence of carbonyl compounds found in wines, including acetaldehyde, formaldehyde, acrolein, ethyl carbamate (EC) and furfural. Acetaldehyde and formaldehyde may be formed through the ethanol and methanol oxidation, respectively. Acrolein may arise as a thermal degradation product of glycerol, amino acids, carbohydrates and triglycerides or by metabolic activity of microorganisms. In addition, acrolein and furfural are formed during wood combustion; therefore, these aldehydes may be present in raw materials due to the environmental contamination. A field study was set up at Kafre – Hakim village, Giza, Governorate, Egypt, to compare the protective value of applying environmental friendly compounds with a known chemical nematicide, oxamyl, for controlling the nematode Meloidogyne incognita infecting sunflower cv. Sakha 53 and their effects on crop production and oil contents. These compounds were 1) furfural,a natural nematicide, 2) amino green 11, commercial formula of amino acids, 3) NPK, an inorganic fertilizer. Background: Robust second generation bioethanol processes require microorganisms able to ferment inhibitory lignocellullosic hydrolysates. In this study, the inhibitor tolerance and flocculation characteristics of Saccharomyces cerevisiae CCUG53310 were evaluated in comparison with S. cerevisiae CBS8066. Results: The flocculating strain CCUG53310 could rapidly ferment all hexoses in dilute acid spruce hydrolysate, while CBS8066 was strongly inhibited in this medium. In synthetic inhibitory media, CCUG53310 was more tolerant to carboxylic acids and furan aldehydes, but more sensitive than CBS8066 to phenolic compounds. Este trabalho teve por objetivo avaliar as concentrações de furfural, álcoois superiores, ésteres, aldeídos, cobre, acidez volátil, metanol e grau alcoólico de aguardentes obtidas de cana, com e sem queima prévia. Foram utilizadas amostras de aguardente artesanal de cana queimada e não queimada, fermentadas com a mesma levedura e destiladas no mesmo destilador; amostras de produtor de aguardente industrial de cana queimada e amostras obtidas de outro produtor artesanal de cana não queimada.
